Fruity crepes

Ingredients for the basic pancake batter ,50g plain flour , small pinch of salt ,50g wholemeal flour ,1 egg ,250ml full fat milk ,50g margarine or oil

Ingredients for the fruity fillings

,Mashed kiwi fruit ,mango , caster sugar to taste ,or apple or pear puree ,ripe pear or sliced banana with chocolate spread

Garnish

,31 small bunch of mint leaves Children's age: all ages

Makes: approximately four to eight pancakes

Preparation time: 20 minutes

Cooking time: two to three minutes per pancake

Together = together A = adult

Together Sift 50g of plain flour into a large mixing bowl. Add a small pinch of salt. Add 50g of wholemeal flour.

Together Break the egg over a small bowl and whisk it. Make a well in the flour and add all the beaten egg. Mix well.

Together Slowly add the milk to the flour and egg mixture. Beat well and make sure all the flour is smooth and has no lumps. Now it is ready to use.

Together Pancake batter will benefit from resting in the fridge before use, if time allows.

Adult Add a knob of margarine to a heavy frying pan, and place over medium heat to melt.

Adult Pour 2tbsp of batter into the centre of the pan. Move the pan from side to side to allow batter to spread out. This should be a thin layer.

Adult Brown the pancake for three minutes on one side, then turn over to brown the other. Repeat this with each pancake, and place each cooked pancake on a warm plate.

Together Add 1tbsp of the fruit of your choice to each warm pancake, and garnish with mint leaves.
